Bellett, John son of Sarah, single woman.
Sally is the only Sarah / Sally I know of of the right sort of age to have been the mother of John. With her brother Thomas marrying in Dodbrooke in 1833 and having his first child baptised there in 1834, possibly she stayed with him and his wife to have her child.
Sally seems to have been officially Sally, but with Sally being a pet form of Sarah could easily have had someone think they were recording her formal name by changing Sally to Sarah.

Actual date and place from 'The Family Register' of John and Ellen - a sheet of paper listing their marriage and their children's births, also from PR entry (image on FMP, viewed 7 Sep 2018).
Whilst the information about John and Ellen on the marriage entry leave it ambiguous as to which John married Ellen (this one or his cousin born 1830 in Dartmouth), other evidence shows it was this John.
The marriage entry shows that he was aged 24 (fits this, not the other John), that his father was called John (fits the other, not this John), and his father was a labourer (good fit for neither, but I guess a fisherman might be regared as a labourer, but could suggest - as I now believe it does - not fit because the John was invented to hide illegitimacy).
Evidence it was this John: master and mates certs for this John show he lived in Dartmouth, overseas death index shows the birthplace of the John who died on 23 June 1878 as Kngsbridge, probate calendar entry shows the John who died on 23 June 1878 was the husband of Ellen.
