Whilst it is possible that Catherine / Kate was 14 years older than Edward not only does this not fit the dob in the 1939 register, or age at death, but it would mean that she lived to the age of 99, possible but not very likely.
Although shown as a spinster when she married (from Edward's service record, marriage cert not seen), it is possible her surname had changed for some reason. It is also possible I have missed her birth registration, with all the possible permutations of spellings of Christian names and surname, inclusion or not of middle name, etc. Also, if the daughter of a soldier (as with a marriage in Strood seems quite likely), she may have been born abroad.

Looking for a Catherine Plumstead or similar in Kent in 1911, the only one I can find is 'Kathleen F Plumstead' aged 41, born Dalston - i.e. she appears to be the Catherine Fanny born in Shoreditch! She was working as a techer, boarding in Sutton Valence, about 16 miles from Halling where an address was given in 1915. Maybe she had moved to another job by 1915 - but could a 45 year old pass for 24?!
I can find no other record, i.e. another marriage or a death record for the Catherine / Kathleen born in 1869 so maybe she did pretend to be over 20 years younger and live to 99.
