- This was in the City and Borough of Canterbury. His probable parents, Evans and Mary Ann, were also living in Wincheap Street in 1841, though the part they were in was described as Canterbury rather than Thanington.
The census entry following was for the same family in 1841 and 1851, so I suspect that although Evants had changed from a shoemaker to a victualler the business was being carried on in the same premises.

Shoe maker - Although most references I have seen to the mechanisation of shoe making refer to the 1850s and the 1860s, this article notes that by 1841 there were hints of what was to come, with some shoemakers describing themselves as manufacturers. Perhaps the effect was enough by the 1840s for Edward to change to being a victualler.

Victualler - Also described as a victualler, his widow named as Charlotte, when he died.
The pub was almost certainly the 'Woodmans Arms', as Charlotte and her second husband were listed between the same neighbours in the 1861 census and the address was named thus then.

John Wrake cites the Canterbury Act Book (in Canterbury Cathedral Library) as showing an Edward who died in 1853, leaving a widow Charlotte and described as "late of Thannington, Victualler".
From the The South Eastern Gazette, 31 May 1853 (one of the items under the heading 'Canterbury'):
"Another Suicide. - Shortly after two o'clock on Mon-
day, Edward Charrison, landlord of the Woodman's Arms
public-house, Wincheap-street, near this city, committed
suicide, while suffering under an attack of delirium tremens,
brought on by excessive drinking. The same evening an
inquest was held on the body, by Mr. Delasaux, coroner,
when the following evidence was adduced: - Hannah Lilley,
a lodger in the house, deposed to hearing, at about half-
past two in the afternoon, something fall heavily in the
bed-room over the tap-room, succeeded by groaning from
deceased ; and having obtained assistance, the room was
entered, when deceased was found in a pool of blood, with
a razor by his side. Life was not extinct, though it was
so before medical assistance, could be obtained. Deceased
led a drunken life, and was occasionally very violent, his
violence as often being succeeded by melancholy or lowness
of spirits. The jury, thereupon, returned a verdict that
the deceased "destroyed himself while in a state of in-
sanity." "

Two sons of Evans Charrosin (b c 1776) - Evans and Henry - were with Edward and his wife Charlotte at the time of the 1841 census; not clear why, as Evans was still alive. Was Edward an older son of Evans or a more distant relation?

For the bapt of Evans' children Elizabeth and Evans his wife is named as Ann; for the later baptisms of Henry and Mary Ann she is named as Mary Ann, but had also been for the earlier baptism of daughter Catherine. before then she was just recorded as Ann when she married. The inconsistent use of the two names suggests one person, not two.
In 1841 Evans 2 sons (the two shown here) were living with an Edward and Charlotte Charrosin; was Edward another son of Evans and Mary Ann? They had a son called Henry, born about 1835. With them at the time of the 1851 census, he was not with his parents in 1841 but there was a 6 year old Henry with Evans and his wife.
Although the spelling of the surname is very variable, putting a few variants in and using wildcards I am able to find most 'Charrosin' family events and census entries in the C19th. The fact that Edward's birthplace is shown as Dublin in the 1851 census is probably significant. When daughter Catherine was baptised Evans was shown as being in the East Kent Militia, as he almost certainly had been when he married. Presumably he was still in the Militia, but now serving in Ireland, when Edward was born.

No real clue as to Edward's parents in marriage entry; Evans and Mary Ann did have a daughter Elizabeth who could well have been the one to witness the marriage, but she could easily have done that if a cousin rather than a sister.
