Age at death said to be 80 i.e. born c. 1796!
I think he may well have been born William Patey, but later used his father's surname. His own illegitmate son was given the middle name Patey, not Issell. Hence I think the following baptism may be his.

It would seem most likely to be a William Issell, but at the time of writing this note I am not aware of a William old enough.
Interesting, in 1813 a Mary Patey married one William Ball in Chivelstone. It is easy to see how 'Isall' could be misread as Ball, so if the curate was given a note with the names of the couple he was to marry then the register could be filled in wrongly. William made his mark, as did Mary, and a witness Richard Ball also made his mark. But would they be likely to go through the whole ceremony with only Christian names used and no reference to the surname? And what about when the banns were read (the Curate, Benjamin Beynon, conducted the wedding; I have not seen the banns entry to see if he too read them).
Just to make it more unlikely still that Mary was marrying a William Issell, there was a child of the marriage baptised as a Ball in 1815.
If it was this William's mother marrying in 1813, I don't believe she was marrying his father.

While Sarah was shown as a servant in 1851, 'na' was shown in the occupation field in 1841.
The 1851 census showed Elenor as visitor, not daughter.
In 1861 William was living by himself, still in Slapton village, though Sarah was still alive, working on a farm in the parish, but Ellen was nearby in the village, working as a housekeeper.
In the date shown here I am assuming William was in Slapton by the time his daughter was conceived.

In 1871 his son-in-law was shown as an ag lab but William was not shown as having any occupation

He was still living in Charleton at the time he died.
